The grapes are selected before harvesting and laid out on mats in well-ventilated rooms to begin the withering process, which concentrates the sugars. After withering, the stalks are removed and the grapes are pressed. The must is then transferred into 70–100 litre chestnut casks containing very old, carefully selected yeasts that are checked every year. The wine matures for three years in these 70–100 litre chestnut casks.
