Patrice Achard has perfected the art of making dessert wine and his St Aubin is no exception. Made from Chenin Blanc, in his Loire Valley domaine, he carries out three separate hand harvests to select the very best grapes. Each harvest is vinified and aged in separate casks, according not only to the harvest, but also to the plot of land where it was grown. The wine is aged on lees in chestnut barrels with weekly stirring.
