The Verdejo grape is hand harvested at optimal ripeness from part of the centenary vineyards and fermented and aged in a mix of huge foudres, which preserve the freshness and characteristics of the grape, stainless steel and French oak. After fermentation, the wine is left on its lees for 8 months to intensify the aromas.
