Grapes are harvested at full maturity, destemmed and crushed, followed by a cold pre-fermentation maceration before undergoing traditional vinification with regular pum-overs for about 10 days. The wine is aged in stainless steel tanks for up to 8 months to preserve all the fruit and freshness.
