Made from 100% Chasselas - a Swiss grape that was planted by the Ducs de Savoie in the 15th cenutry. Grown on a vineyard that is surrounded by the soft waters of Lake Geneva and the ancient castle walls.
Hand harvested at full ripeness. Alcoholic fermentation at low temperature followed by a malolactic fermentation. Traditional vinification separate per plot, in stainless steel tanks. Matured in vats for 10 months.
