Axelle Machard de Gramont is a 5th generation wine grower and rising star. All wines on allocation only. The work on the vines is carried out by hand and grapes are harvested at optimum ripeness. Tiny parcels (plots) of very old vines, producing low yields, are used to make the wine with minimal human intervention other than leaf stripping and green harvest. Further selection and destalking of grapes on sorting tables so that only the best go on to vinification. Fermentation in conical oak vats, with cold pre-fermentation. Long, natural settling and aged in 2nd and 3rd year oak barrels. Natural clarification by gravity.
