A meticulous selection of the best grapes with the highest limestone content at the Valdelobas plot which undergo a pre-fermentation maceration. Grapes are allowed to infuse so that they transfer their unique compounds to the must, with one or two pumping overs per day. The wine also undergoes a longer post-fermentation maceration at exactly the right time. The wine is aged for around 17 months in huge, fine-grained French oak barrels of 400 and 500 litres (2nd/3rd use) alongside a selection of new barrels.
