Vino de Finca D.O. Ribera del Duero 2021, Valtravieso

Grapes hand harvested and selected before a long individual pre-fermentation maceration for each grape variety. The grapes are then left to gently infuse all their fruit flavours into the wine. Only one or two pumping overs per day with racking and returning when ready. Post fermentation maceration to achieve perfect results for each vintage. The wine spends 13 months ageing in fine-grained French oak barrels (25% new) before being racked into enormous 5000 litre foudres for a further 4 months. The vast volume of these vessels minimises the influence of the oak as the ratio of wood to wine is lower. This allows it to benefit from the structural and micro-oxygenation benefits of wood ageing, without adding any overpowering flavours to the wine. It's used at Valtravieso to preserve the freshness and character of the wine as it softens slowly at a more consistent temperature and their is less liquid lost in the process.
