Made from estate-grown grapes harvested at optimal ripeness. Siblings Juan Luis, Maite and Diego Quiroga work closely together in their sixth-generation family vineyard. which boasts a historic cellar, hand-carved 8–10 metres underground and supported by ashlar stone arches. Dating back several centuries, this cellar remains in active use today for both vinification and maturation.
After destemming, the grapes undergo fermentation in stainless steel tanks at controlled temperatures. Pumping over is carried out daily to achieve the smoothness and freshness that characterise this wine. After 7-10 days, the wine is decanted, to achieve the perfect balance.
