Verdejo grapes grown on 65 year old vines in the heart of the DO. Minimal intervention agriculture, allowing the climate with its strong contrasts between day and night temperatures to provide the perfect balance of ripeness and acidity at 700m above sea level. The wines are stored in the ancient cellars of an old church. Grapes are hand harvested during the cool of the night and undergo cold soaks prior to crushing, anaerobic winemaking and temperature controlled fermentation.
One of the rare remaining family vineyards is this part of Rueda. Grapes are harvested at the dead of night to preserve all their freshness at this low-intervention vineyard.
